A friend invited me to lunch at Cayo Espanto, a private island about 10 miles off the coast of mainland Belize. It was there that I discovered the Espanto Wave.

Now, I’ve been to a few cool places during my travels, but I have never seen anything quite as tranquil as Cayo Espanto. There are only 5 private cabanas on this island, all of which sit just inches off of the Caribbean Sea. They are outfitted with all the necessities of island life; satellite radio, top notch cuisine, infinity pool, water toys, sunscreen and plenty of great cocktails. Upon arrival (and throughout the day) I acquainted myself with the ultimate fou-fou drink, The Espanto Wave. Do yourself a favor and give this one a try.
Espanto Wave
1 oz spiced rum (they use Captain Morgan)
1 oz Caribbean Dark Rum (a Belizean favorite)
1 oz Curacao
1 oz Amaretto
1 oz Triple Sec
1 oz pineapple juice
1 oz Lime Juice
1 tbsp Sugar
Ice Cubes
Blend all the ingredients in a bar blender until smooth and frozen.
Pour into a pint or collins glass. Garnish with a lime wedge.
Sit back, crank up the tunes and enjoy!

Now this looks good. Think I will try making this over the weekend. First poolside party of the season. Don’t know if the pool will be warm enought, but we will be partying poolside here in SFL
